Descending the wrought-iron staircase to Peter Shear's, patrons immediately feel the charm of the 120-year-old building in which the basement restaurant resides. Inside, exposed stone walls and rich woodwork emulate historical style. However, a polished elegance tempers the rustic qualities and hints at the upscale, contemporary American cuisine. Hearty meat and fish dishes make up the menu, but offer variations on traditional preparations. Juniper, sassafras and fennel flavor the lamb satay appetizer. The lamb shank entree is a superior, tender dish; a Concord-infused sauce imparts rich succulence, and creamy goat-cheese polenta supplies an appropriately mellow side. If room allows, try one of Peter Shear's several desserts, like the whimsically named sassafras Granny Smith granite -- an Italian ice made from apples with sassafras overtones.
