June 03, 2005        For 27 years, Giovanni's has been defining East Side (and, some might say, the area's) fine dining. The standards set are high ones: The restaurant is a perennial AAA Four Diamond winner and consistently places in several categories in Live's Readers Poll. One look at the menu reveals why: Appetizers include trifolata di lumache e gamberetti in mille foglie dorato (seared escargots and shrimp with roasted shiitake mushrooms in golden puff pastry); the entree selection features arrosto di s˙gliola filettato con verdure di stagione (whole dover sole mugnaia with tomato bearnaise, vegetables and new potatoes) and gnocchi verdi di ricotta e spinaci con sugo di carne (sweet ricotta and spinach dumplings with Tuscan meat sauce and pecorino).
